Italian recipes are straightforward and often use few ingredients relying on the combination of a few tastes to deliver flavour. The ingredients grow well in the warm climate and there is an abundance of different colours and varieties.

We are often astounded by how quickly and effortlessly a delicious meal can be conjured up to satisfy a few friends that have popped round uninvited. That is the sense we like to convey in our cookery classes. Local people will come to show how to cook whatever is in season. It is a hands on and help type class, trying out dishes such as spaghetti con le melanzane or risotto alla pescatore. In the morning we will visit the greengrocer or the market stall and prepare all the ingredients. The session will end around the table where we will taste all the delicious dishes that have been prepared.
